Cajun Chicken Rice
Over the last couple of weeks, I have been trying to use the Instant pot to cook chicken. In the past, my attempts were mostly just overnight marination of the chicken with the usual indian spices and yogurt and then baking them at 450 the next day. But using the Instant Pot has really thrown the doors wide open to try out a large diversity of preparations. I was able to make Butter Chicken masala, Mexican style pulled chicken and Coconut Tamarind Chicken Curry. There has been absolutely no dearth in the number of recipes that are out there to keep that Instant Pot on 24/7.Anyway, I found this recipe of Cajun Fried Rice which was so simple to make and I loved the result. What I also loved is that it actually has a link to make your cajun seasoning, which I tried and it gave me a little kick too. I think I see where my wife gets that joy of cooking now and why slowly, little by little the kitchen bug has been biting me.
